Chicken and Leek Cream Soup Recipe

Ingredients to make Cream of Chicken and Leek Soup:

  • 1 medium chicken breast.
  • 80 grams of butter
  • 450 cm3 of chicken broth
  • 250 cm3 of milk cream
  • 60 grams of flour
  • 200 cm3 of liquid cream
  • 1 chopped leek
  • chopped basil
  • Salt and
  • pepper to taste
  • Olive oil

How to make Cream of Chicken and Leek Soup:

  1. Place the butter, olive oil and flour in a Teflon pot or similar.
  2. Sauté them over moderate heat for a few minutes until the mixture is golden brown. Add the broth little by little, stirring with a wooden spoon until the mixture is homogenized, stirring constantly until the mixture boils and thickens.
  3. Add the milk cream, the chicken pieces.
  4. Cook the cream and leek over low heat for another 7 minutes, salt and pepper to taste.
  5. Sprinkle the soup already served on the plate with the chopped basil.
  6. It can be accompanied with toasted bread sautéed in olive oil and garlic.
