Hare stew with paprika recipe
Ingredients to make hare stew with paprika:
- For 4 people:
- 1 hare.
- 30 g of lard (can be replaced with 1 dl of 1º olive oil).
- 250 g of onion.
- 250 g of tomatoes.
- 2 bell peppers.
- 1 glass of red wine aging.
- 1 glass of water.
- 1 bay leaf

How to make hare stew with paprika:
We clean the hare and cut into small pieces.
Peel and chop the onions very small.
We roast the peppers on the grill or in the oven.
Peel the peppers and cut into thin strips.
Heat water in a saucepan and submerge the tomatoes for 30 seconds, remove and peel them, removing the seeds and cutting them into pieces.
In a saucepan, heat the butter and fry the chopped onions.
Season with a pinch of salt and 2 tablespoons of paprika but lowering the heat a little so that the paprika does not burn.
Add the pieces of hare and stir so that they fry a little and take on the color of the paprika.
Add the glass of red wine, the glass of water and the bay leaf.
Cover the pan and cook over a very low heat for 2 hours, sprinkling occasionally with a little water or broth if the stew dries out.
Add the chopped tomatoes and pepper after 2 hours of cooking and let cook for 20 more minutes.
We put the point of salt at the end and serve in the same casserole.
