Galician Stew Recipe
Ingredients to make Galician stew:
- For 4 people:
- 300 g of marinated ham.
- 400 g of potatoes.
- 4 sausages.
- 100 g of bacon.
- 400 g of turnip greens.
- 300 g of chickpeas.
- 1 clove garlic.
- 6-8 tablespoons of oil.
- 1 pinch of paprika.
How to make Galician stew:
In a large container, cook the pork shoulder and the bacon.
After an hour, we change the water and let it cook for another hour.
When changing the water, we add the chickpeas.
When there are 20 minutes left to cook, add the potatoes, peeled and cut into pieces.
In another container, cook the turnip greens, previously blanched (submerged for a few moments in boiling water to remove their strong smell), with the chorizos.
Once the chorizos and turnip greens are cooked, we separate them and chop the chorizo into the chickpeas.
Fillet the garlic and fry them in oil.
Once golden, add the turnip tops and a pinch of paprika.
Everything is served together, except the turnip greens, which are served separately.
