The quiche is a savory cake filled with a mixture of eggs and fresh milk cream. In this case, the filling will be made up of vegetables, sautéed aubergine and courgette. The important thing about this recipe is the variety of being able to include any type of ingredient in the filling, this allows an infinity of recipes with this shortcrust pastry. Keep reading and prepare this delicious eggplant and zucchini quiche.
Ingredients to make Eggplant and Zucchini Quiche:
- 1 unit of dough for quiche
- 200 grams of mozzarella cheese
- 3 units of Eggs
- 1 unit of white onion
- 1 unit of Zucchini
- 1 unit of Eggplant
- 1 pinch of garlic paste
- 300 milliliters of heavy cream (1½ cups)
- 1 pinch of Nutmeg
- 1 pinch of salt
- 1 pinch of pepper
How to make Eggplant and Zucchini Quiche:
1 Our first step is to pre-list the ingredients for the preparation of our healthy quiche. On the page we find the link for the preparation of the dough for quiche in the following recipe, consult it and prepare your own dough.
2 We must stretch the quiche dough and take it to the respective molds where we are going to bake it first. Remember that we must prick it with a fork so that the air enters while we bake them.
3 Take our quiche dough to the oven at 180ºC for 15 minutes, or until you see that the cakes are ready. Remove them and reserve them to be used later in our recipe, it is important that you add weight as shown in the photograph with a little aluminum foil with some type of dried legumes inside so that the dough does not grow.
4 While the shortcrust pastry is baking, we are going to make the filling for our aubergine quiche. Take a bowl and mix the cream and eggs with salt, pepper and nutmeg to taste. Mix very well until all the ingredients are integrated.
5 Sauté the aubergine and courgette with a little olive oil with salt and pepper to taste until our vegetables are al dente or at the desired doneness. Remove it and reserve the filling.
6 Add with the help of a spoon a little filling of the sautéed vegetables as seen in the photograph.
7 Add the mixture of eggs and milk cream on top of the vegetables, which acts as the base filling of a true quiche, add grated cheese on top. Take the healthy cakes to the oven at 180ºC for about 10 or 15 more minutes until the cheese gratin.
8 Serve our healthy quiches as we see in the photo, we cut a piece so you can see how it looks. If you wish, you can make the quiche in a larger mold, the reason why I decided to make it this size is that the presentation seems very nice and it is a more personal presentation for each of the diners.
