Rice and pecorino cheese croquettes recipe

FoodsDiary By FoodsDiary

Let’s talk a little about the main ingredients of this recipe, pecorino is an Italian sheep’s cheese widely used in the cuisine of that country, if you can’t find this product you can replace it with Parmesan cheese. This recipe was born as another alternative for people who do not consume animal proteins.

Ingredients to make Rice and Pecorino Cheese Croquettes:

  • 300 grams of cooked rice
  • 2 tablespoons of breadcrumbs
  • 150 grams of Pecorino cheese
  • 2 units of Eggs
  • 2 units of white onion
  • 1 dessert spoon of garlic paste
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make Rice and Pecorino Cheese Croquettes:

1.Our first step to take this delicious recipe is to pre-list our ingredients.

2.Take the previously cooked rice, the white onion in hulls, garlic paste, salt, pepper and add the eggs one by one to make the dough for these delicious vegetarian croquettes. With the help of a processor, mix all these ingredients until they form a homogeneous paste.

3.Once all the ingredients are mixed, add the bread crumbs and mix very well. What this is going to do is shape our croquettes and make them have a firmer consistency.

4.Finally add the grated cheese on top and mix very well with the help of a teaspoon. Be generous with the cheese as this is the main ingredient in our preparation. Let this mixture rest for about 15 minutes and it will be ready to use.

5.With the help of the hand we must give a round shape to the mass of the pecorino croquettes, it is important that medium balls are formed that are all of a similar size, if you want to fry them in oil it is totally valid, but in order not to add extra calories the I have made in the oven. Cooking at 160 degrees for about 20 to 25 minutes.

6.Once our croquettes are golden, remove them from the oven (or if you decided to fry them, remove them from the oil and place them on absorbent paper to remove excess fat). Serve them with any aromatic herb sprinkled on top, such as oregano, and I advise you not to add any sauce since the mixture of cheese and rice gives a unique flavor to the rice and pecorino cheese croquettes. Enjoy this delicious recipe!!
