How to make Cuban Style Chicken Croquettes:
To prepare the Cuban-style chicken croquettes, we gather all the ingredients.
Sauté the onion with the melted butter in a pan until transparent.
Add the shredded cooked chicken and cook for 3 minutes. We have used a thigh from a chicken soup, but you can use any piece of chicken you have at home.
Add the dry wine and let the alcohol evaporate by cooking for a couple of minutes.
Next, add the flour and stir well so that it mixes with the sofrito. We cook for 1 minute. At this point, the process is very similar to that of typical Spanish croquets.
To finish the dough, add the milk little by little without stopping stirring. Add a pinch of pepper, salt, nutmeg and stir until the dough comes off the pan. If it is too runny we can add more flour.
Once the dough for the Cuban-style chicken croquettes is made, spread it out on a flat plate or tray and let it cool in the fridge for at least 1 hour.
After this time, when the dough is cold and compact, it is time to shape the croquettes with the help of two spoons.
Coat the chicken croquettes by passing them through flour, beaten egg and breadcrumbs.
We fry the Cuban-style chicken croquettes in plenty of sunflower oil at high temperature.
