The flautas are a Mexican appetizer that is part of traditional Mexican cuisine. They are consumed all the time, at lunchtime, in the afternoon meal or for dinner. In any weather they are a good choice. In this article, we give you the recipe for potato flautas with chorizo.
Ingredients to make potato flautas with chorizo:
- 1 kilogram of Potato.
- 1 kilogram of Tortillas for flutes.
- 500 grams of Chorizo.
- 500 milliliters of Cream
- 500 grams of grated cheese.
- 1 piece of purple onion.
- 1 liter of Oil.
- For the green sauce.
- 500 grams of green tomato.
- 5 pieces of Serrano chili.
- 1 clove garlic
- 1 piece of Onion.
- 1 bunch of Cilantro.
How to make potato flautas with chorizo:
1.The first thing is to gather all the ingredients to be able to make the Mexican flutes. Then, we wash the potatoes with a brush under running water.
2.To make the filling for these Mexican flautas, we cook the potato in water with a tablespoon of salt, for 15 to 20 minutes, or until they are soft.
Trick: We can test if they are soft by chopping with a knife.
3.Once cooked, remove the potatoes, let them drain and cool slightly. We remove the shells and proceed to crush them to prepare a puree with them. Reserve the purée separately. In another container we cook the tomato, the chili, a clove of garlic and a piece of onion to prepare the sauce.
4.On the other hand, we slice the chorizo into thin slices and fry it in a pan.
5.To the chorizo sauce we add the potato and with this mixture we fill the tortillas to make the flutes. Remember that, if you wish, you can make the corn tortillas yourself.
6.Fry the flautas in abundant oil until they are golden brown.
7.Remove them from the pan and let them drain on absorbent paper
8.Once drained, we arrange the potato flautas with chorizo on a plate and put cream, grated cheese and green sauce on top. Prepare a heart of palm ceviche to accompany or a corn salad.
