- 1 cup of shredded chicken breast
- 4 units of Creole Potato cooked
- 1 cup of precooked yellow corn flour
- 2 tablespoons of tomato paste or hogao
How to make Colombian Chicken Empanadas:
1 The first thing you should do to prepare these Colombian chicken empanadas is to get all the ingredients ready. Remember that the chicken breast must be previously cooked in water and shredded, the same as with the Creole potatoes that you must peel and cook until they are soft, if you do not get the Creole potato, which is the yellow one, you can use potatoes.
2 Place the yellow cornmeal in a large container and add a cup of warm water, let stand for 1 minute, if the dough is very hard add more warm water.
3 After a minute, knead the dough until it is homogeneous and consistent, it does not last.
4 Separately, in a container mix the chicken, the potatoes and the hogao or tomato paste until all the ingredients are integrated, rectify the flavor with salt and pepper to taste.
5 Now, to form the Colombian empanadas, you must place a bag smeared with oil, this to prevent it from sticking, and stretch the dough with a rolling pin. Then place a little filling in the center and if you have an empanada-making device you can use it, if you cannot make them with a glass, you only have to press with half of it.
6 When you have all the empanadas formed, fry them in abundant boiling oil until they are well browned.
