Potato Knishes Recipe

Ingredients to make Potato Knishes:

  • Dough Ingredients:
  • 1/4 cup of oil
  • 3/4 cup of warm water
  • flour as needed
  • 1 pinch of salt
  • Filling Ingredients:
  • 1 1/2kg. of potatoes
  • 3 chopped onions
  • fried in oil
  • 1 or 2 tablespoons of water
  • Salt and pepper to taste

How to make Potato Knishes:

1.Put the warm water with the oil and salt in a bowl, mix well and add the necessary amount of flour while beating with a wooden spoon, until a soft dough forms. Let stand for about 1/2 hour. Cook the potatoes and prepare a puree with the water, pepper and salt. Add the fried onions (along with the frying oil), and stretch the dough very thin and cut into 10 by 30 cm rectangles. We place along the larger side 10 or 12 mounds of puree. We close the dough lengthwise and cut (it should be like a stuffed cannelloni). We cut the knishes by pressing with the edge of the hand next to each mound of puree. We finish closing the knishes giving them the shape of stuffed rolls. Then we paint with egg and take them to the oven over high heat at first and then lower to medium, approx. 1/2 hour.
