Mexican Esquites Recipe

This time we are going to prepare some delicious Mexican Esquites, which go down very well in the cold season and are also very easy to prepare. Esquites are very popular Mexican appetizers throughout the country and are nothing more than corn kernels fried or boiled in salted water, epazote and other scented herbs.

Ingredients to make Mexican Esquites:

  • 3 cups of shelled corn
  • 2 tablespoons of Butter
  • 2 tablespoons of olive oil
  • 50 grams of onion
  • 3 pieces of Chile de arbol
  • 10 Epazote leaves
  • 1 jar of Mayonnaise
  • 2 cups of grated cheese
  • 4 pieces of Lemon
  • 10 grams of salt
  • 1 packet of chili pepper
  • 3 garlic cloves

How to make Mexican Esquites:

1.The first step to prepare Mexican Esquites is to clean the chiles, removing the tail and the seeds, as they are very spicy. Then we will cut them into small pieces.

2.Apart wash and finely chop the onion and garlic. Reserve.

3.Heat a frying pan over medium heat and put the butter together with the oil so that it does not burn. Add the onion and garlic, fry until they are acitronen (they are transparent and slightly golden).

4Add the corn kernels, when they are slightly golden add the chili and the finely chopped epazote leaves, continue sautéing for a few seconds.

5.Serve half the glass with Mexican Esquites and put mayonnaise, grated cheese, piquín chili, salt and lemon to taste. Serve more Esquites on top and finish with the same garnishes.
