As we all know, ceviche is a dish that was born in Peru and consists of marinating any type of protein (especially white fish) with lemon juice or any citrus. It is a widely used dish in Latin America and depending on the region its preparation varies. In this recipe I wanted to bring a version for people who are vegetarian and do not eat fish either. Do not miss this recipe and prepare this delicious cauliflower ceviche.
Ingredients to make cauliflower ceviche:
- 2 units of Cauliflower
- 6 units of fresh lemons
- 2 units of red onion
- 1 unit of Avocado
- 25 grams of fresh coriander
- 100 grams of roasted corn
- 1 pinch of salt
- 1 pinch of pepper
How to make cauliflower ceviche:
1 The first step to make this recipe is to pre-list all the ingredients for our healthy ceviche.
2 Take a pot with water over medium heat and once you see that the water is boiling, add the cauliflower without the stem with a little salt to taste, let it cook until it is soft. Remove it and let cool.
3 While we let the cauliflower cool, peel the onion and cut it into feathers, put it in the bowl where you are going to make the cauliflower ceviche.
4 Add the avocado in medium squares and the juice of the lemons so that the ingredients are marinated.
5 Once the cauliflower is cold, add it to the bowl where you have the rest of the ingredients with a little salt and pepper to taste. Mix very well until all the ingredients of the healthy ceviche are integrated. Let the preparation rest for approximately 15-20 minutes.
6 Finally, before serving, add the clean and finely chopped cilantro. Mix well until the ingredients of the cauliflower ceviche are integrated, which will be ready to serve.
