Ingredients to make Broccoli Croquettes:

  • 1 broccoli
  • 1 glass of almond milk
  • 1 tablespoon cornstarch
  • 60 grams of breadcrumbs
  • 1 pinch of salt
  • 1 splash of extra virgin olive oil

How to make Broccoli Croquettes:

1 Here are the ingredients for this healthy broccoli croquette recipe. For the béchamel we will use extra virgin olive oil, almond milk and corn flour or cornstarch. We will make the batter of the croquettes very light, only with breadcrumbs, as we will cook them in the oven instead of frying them, it is not a problem. In this way, they will be authentic vegan croquettes. However, if you don’t mind that they are not vegan and want to fry them, we recommend taking an egg.

2 In a pot with plenty of water, boil the previously washed and chopped broccoli, having discarded the stem. 10 minutes of cooking will be enough.

Tip: You can also make broccoli and carrot croquettes by adding one or two peeled and chopped carrots to the pot of water.

3 Prepare the vegan béchamel. To do this, heat a splash of extra virgin olive oil in a pan and add the cornmeal. Stir well, then pour in the almond milk. Go stirring while you cook the sauce over medium heat to thicken. If necessary, add more cornstarch.

4 When the béchamel is ready, add the previously boiled and drained broccoli to the pan. With the help of a fork, mash it and mix to make a homogeneous cream. When you have it, turn off the heat and spread the broccoli croquette dough on a plate. Let it sit for about 20 minutes to cool down so you can later prepare the croquettes.

Tip: Preheat the oven to 170 ºC.

5 Form the croquettes with your hands and coat them with a little breadcrumbs. Remember that if you are going to cook them fried, you will have to first pass them through a beaten egg. Place them on a tray lined with baking paper and cook the broccoli croquettes in the oven at around 170ºC.

Tip: If you don’t want to make them vegan, we recommend making the broccoli and cheese croquettes by adding a piece in the center and covering it with the dough.

6 The broccoli croquettes will be ready when they have browned, between 10 and 15 minutes.
