How to make Easy Shrimp Stuffed Squid:
- To start making our shrimp-stuffed squid recipe, the first step is to prepare all the ingredients.
- Wash the purple onions and cut them into small squares. Cut the mushrooms and reserve them. Bring a skillet over medium heat with a tablespoon of olive oil, add the onion and mushrooms to start making the squid filling.
- Once the mushrooms and onion are fried, add the prawns, a little garlic paste to taste, salt and pepper. Stir well until the ingredients are integrated. Let the prawns cook for approximately 5-7 minutes, it is important that they are defrosted and we have removed the excess water. Turn off the heat when the shrimp filling is ready and let it cool down.
- Once cold, add the bread crumbs and chives or chives to taste as shown in the photo. Mix the calamari filling well.
- With the help of a spoon, fill the squid tubes one by one and close the holes with wooden toothpicks as shown in the photo.
- Once the squid tubes are sealed, take them to a refractory, add salt and black pepper to taste. If you want you can add a teaspoon of olive oil on top. Bake the stuffed calamariat 160ºC for approximately 20 minutes, or until they are at the desired cooking point.
- Once you remove the baked squid tubes, remove the wooden toothpicks.
- Cut the squid as shown in the photo, very carefully into four pieces as the filling can come out of these.
- Serve the shrimp-stuffed calamari with any accompaniment you want, mashed potatoes, rice or pasta. They can also be seasoned with some light sauce
