Drunken octopus recipe with brandy

Ingredients to make brandy drunk octopus:

  • 2 kilos of octopus
  • 1/3 cup of brandy
  • 1 kilo of roasted tomato, peeled, chopped and without seeds
  • 3 tablespoons olive oil
  • 3 tablespoons of sunflower oil
  • 4 garlic cloves, minced
  • 1 chopped onion
  • 1 cup of red wine
  • Salt
  • pepper the necessary
  • 2 tablespoons chopped parsley
  • jalapeno pepper slices
  • olives
  • capers to taste

How to make brandy drunk octopus:

  • At the fishmonger, ask them to clean your octopus.
  • At home beat it a little to soften the meat.
  • Wash it very well and put it to marinate with brandy and some salt.
  • Then put it 3 times in boiling water.
  • Cook the octopus in the same brandy and water (for faster use in a pressure cooker), keep the water where it was cooked and cut the octopus into pieces.
  • Heat the oils and brown the garlic with the onion, add the chopped tomato and cook until they change color, stirring occasionally, add the octopus in pieces, a little of the cooking water and red wine; salt, pepper and cook until the sauce thickens.
  • To serve add jalapeño slices, olives, and sprinkle with chopped parsley.
  • SERVE WITH WHITE RICE.
