Ingredients to make Norway lobster with tarragon:
- 16 medium scampi
- 1 medium onion peeled and finely chopped
- 1 glass of brandy
- 3 tablespoons olive oil, a few sprigs of fresh tarragon
- Salt
- Pepper
How to make Norway lobster with tarragon:
- Remove the heads of the scampi, peel them carefully and cut them in half, lengthwise.
- Heat the oil in a frying pan over the heat and fry the finely chopped onion together with the previously washed and dried tarragon, for a few minutes or until the onion is transparent.
- Add the halved langoustine tails, pour over the brandy and flambé.
- Season the preparation with salt and pepper, bring to a boil and serve immediately.
