Ingredients to make Baked Sweet Rice Empanadas:
- 1 kilogram of puff pastry
- 1 cup of rice
- 2 cups of whole milk
- ½ cup evaporated milk
- ½ cup of condensed milk (120 grams)
- ½ cup of Sugar (100 grams)
- 1 piece of Egg
- 2 pieces of Cinnamon
How to make Baked Sweet Rice Empanadas:

- We are going to start with the preparation of the fillingfor our sweet empanadas: this will be rice pudding, therefore we are going to start by placing the rice soaked for 10 minutes in cold natural water.
- Meanwhile, on the other hand, we place the whole milk and the evaporated milkin a saucepan along with the cinnamon, over medium heat.
- Once the rice is ready, we drain it perfectly well, and add it to the saucepanwhere the milk is found together with the cinnamon.
- We move well to integrate everything and after 5 minutes of adding it, we add the condensed milk to the mixture, re-integrating everything perfectly.
- We let the rice cook over low heat but we must be aware and constantly moving the mixture of the baked empanadas, otherwise the preparation can burn and stick the rice to the pan.
- Meanwhile, with the help of a rolling pin on our work table, previously floured, we extend the dough of the rice empanadas, until it is approximately 2 mm thick.
- Once ready, with the help of a round mold we begin to cut the circleswith which we will form our sweet empanadas.
- Once the rice pudding is ready, let it cool down for a moment. Already cold, we take a little and we fill the circles of doughfor the empanadas, as we can see in the image.
- We take the egg, we scramble it a little and we are going to place a little on the edge of our sweet empanada, this is to help it seal well.
- Then we close our baked sweet rice empanadas and with the help of a fork we reinforce the sealing of the edge of our empanada.
- We must do something similar to what is observed in the following image.
- Now we take the baking mold, spray it with a little spray oil and place our already formed and sealed rice patties on it.
- Bake for 30 minutesat 180°C or until golden brown.
- After this time our baked sweet rice empanadaswill be READY! To be tasted.
