Ingredients to make Sweet and Sour Ginger Shrimp:
- 80 ml of orange juice
- 40 cc of white balsamic vinegar
- 2 tablespoons fresh ginger
- 2 teaspoons minced garlic
- 1 teaspoon of honey
- 1 teaspoon orange zest
- ¾ kg shrimp, peeled
- 2 tablespoons chopped shallots
- 125 cc of bouillon
- 25 ml of vegetable oil
- 1 teaspoon hot mustard
- 4 cups of green leafy vegetables:
- of lettuce
- watercress
- Swiss chard or spinach
- 2 tablespoons fresh parsley, chopped
How to make Sweet and Sour Ginger Shrimp:
- In a bowl, mix the orange juice, vinegar, ginger, garlic, honey, and orange zest; add the shrimp, stir, cover and place in the refrigerator for 40 minutes.
- Drain the shrimp and reserve the marinade.
- Thread shrimp onto 4 skewers.
- In a skillet, place the marinade with the shallot, over high heat, uncovered, for 2 minutes. Until the mixture is reduced.
- Add broth and simmer 2 more minutes, until reduced to 1/3 cup.
- Add the oil and mustard, and stir the dressing well.
- Place the skewers on a roasting pan and cook for 4 minutes on each side.
- In a large bowl, mix the green leaves with half the dressing and place on a serving platter.
- Place the skewers on top and pour the sauce on top.
