  • ½ unit of Cauliflower
  • 2 units of Egg
  • 100 grams of grated cheese
  • 70 grams of breadcrumbs
  • 1 pinch of black pepper
  • 1 pinch of salt
  • 2 teaspoons of parsley

How to make Baked Cauliflower Croquettes:

1 Here we have the ingredients for these homemade vegetable croquettes. With half a cauliflower it will be enough for almost twenty croquettes. For the cheese, we will choose a grated mix of mozzarella and emmenthal, for example.

2 Wash the cauliflower, discard the leaves and grate the white mass in a bowl. Put the bowl in the microwave and cook the cauliflower for eight minutes.

3 To make the dough for these vegetarian croquettes, we take the cauliflower out of the microwave and mix it first with the grated cheese, and then with the beaten eggs. Also add the breadcrumbs and parsley along with a little salt and black pepper. Mix everything so that there is a uniform mass.

4 In a baking tray, lined with special paper, we have the mixture of cauliflower and egg in the form of croquettes. Put the tray in the oven and cook for 20-30 minutes at 200ºC. Of temperature.
