Ingredients to make paleo chocolate cookies:
- 2 cups of almond flour
- ½ cup coconut oil
- ⅓ cup Birch Sugar or Xylitol
- 1 egg
- 2 tablespoons unsweetened cocoa powder
- 1 handful of walnuts
- 1 teaspoon of baking powder
- 1 pinch of salt
How to make paleo chocolate cookies:
- To make our paleo chocolate cookies we start by gathering all the ingredients. If you frequently follow the paleo diet you will be used to them, otherwise we explain that processed wheat flour with gluten is not used in this type of recipe, so you can change it for any other.
- As for sugar, the one we mention in the list of ingredients is a natural sugar from birch bark, also recommended in diets for diabetics.
- Taking all this into account, we begin by beating the egg with the sugar, cocoa powder, yeast and salt. Beat all this well until integrated and when you have it, add the sifted flour little by little until you get a homogeneous mixture.
- Coconut oil usually comes in a solid state, so we will have to heat it up a bit in a bain-marie to add it to the chocolate cookie mixture.
- We can also heat a few seconds in the microwave and when it is liquid, we mix with the rest of the previous mass until integrated.
- Now to finish with the mixture of our paleo cookies, all that remains is to add the nuts. We have decided to use nuts, but you can use almonds, pistachios or any other fruit of your choice.
- The dough for these chocolate cookies is quite soft, so you can help yourself with a pastry bag or a spoon to place the mixture portions on a baking tray previously lined with parchment paper.
- Cook the homemade cookies in the preheated oven at 180ºC for about 20-30 minutes; remember that the cooking time will depend on the power of the oven. In any case, make sure they don’t burn; they should be soft in the center and slightly crunchy on the edges.
- When they are ready, remove from the oven and let cool on a wire rack.
- These paleo chocolate cookies are delicious and you will be surprised how good they are without using any type of processed food.
