Ingredients to make Chocolate Covered Cupcakes:
- 7 eggs
- 300 grams of Butter (1⅓ cups)
- 400 grams of Sugar (2 cups)
- 400 grams of flour
- ½ lemon squeezed
- ½ envelope of Yeast
- 2 dark chocolate tablets
- 2 white chocolate tablets
- Sugar glass
How to make Chocolate Covered Cupcakes:
- The first step in making these chocolate covered muffins is to melt the butter and place it in a separate bowl.
- On the other hand, mix the eggs with the sugar. This process is called egg whitening and is widely used in confectionery.
- Subsequently, we mix the flour with the yeast and incorporate it into the container with the eggs and sugar.
- Squeeze half a lemon and also mix it with the rest of the ingredients for the muffins with chocolate coating.
- Then we add the butter that we have previously melted and we will obtain the dough for the homemade muffins.
- While we let the muffin dough rest, preheat the oven to 200°C.
- We put the muffin dough in the capsules, occupying 3/4 of them and we put them in the oven for approximately 10 minutes, or until we prick them with a toothpick and it comes out dry.
- While the homemade muffins are baking, we melt the dark and white chocolate tablets separately in the microwave or in a bain-marie. Here we can mix them once melted and make a cover for white and dark chocolate muffins or, not mix them and cover some muffins with white chocolate and others with black, as you prefer.
- Once baked, let the muffins cool down a bit and cover them with the corresponding chocolate. Then we sprinkle a little icing sugar on top and we can already serve our chocolate-covered cupcakes to the table for snacks.
