Ingredients to make Chocolate Covered Alfajores:
- 340 grams of Butter
- 260 grams of sugar
- 2 teaspoons of Vanilla
- 4 eggs
- 1 kilogram of wheat flour
- Cocoa to taste
- 1 teaspoon of baking powder
- 800 grams of Chocolate Coverage
- 100 grams of white chocolate coverture
- 500 grams of Manjra or Dulcet de lecher
How to make Chocolate Covered Alfajores:
- Beat the butter at room temperature together with the sugar until it forms a homogeneous mixture. Then, add the eggs one by one, along with the vanilla essence and continue beating.
- To finish the dough for our homemade albacores, add the previously sieved dry ingredients, that is, flour, baking powder and cocoa.
- Mix all this until the dough has a heavy texture. Then start kneading in an enveloping way until everything is perfectly integrated.
- Shape the dough into a ball, wrap with plastic wrap and reserve in the freezer for about 20-30 minutes.
- After this time, we take the dough out of the freezer and prepare to stretch it with the help of a rolling pin, extending a sheet with a thickness of 1/2 centimeter more or less. Then cut the circular pieces with a glass or a pasta cutter.
- Place all the lids on a tray and cook in a preheated oven at 200ºC. After approximately 5-7 minutes, remove from the oven and let cool for at least 15 minutes.
- It is important to constantly check the oven during cooking to check that the cookies are cooked.
- When the cookies are cold at room temperature, we begin to assemble the stuffed albacores. So start spreading each of the cookies with delicacy and cover with another, repeating this until you finish all the cookies. Book.
