How to make Vegetable Baskets:

Are you wondering how to make baskets with empanada tapas? To make the recipe for vegetable baskets, you must first prepare the onion, it will provide the filling with a very rich flavor. To do this, peel it, chop it and sauté it in the pan over high heat with 1 teaspoon of oil until it is transparent and golden. At this point, lower the heat to medium and add 1 tablespoon of hot water. Repeat each time it starts to stick, as the water will evaporate and they will be caramelized with their own sugar. Keep it off the heat to cool down. Dissolve cornstarch in cold skim milk. Then heat it in the microwave for 1 minute, stir and heat it for a further 30 seconds, stirring in the center until it thickens. Turn on the oven to maximum temperature.

Tip: if you don’t have a microwave, place the milk with the cornstarch in a small saucepan and stir over medium heat until it thickens.

When the white sauce cools down, add the egg and seasonings. Mix the sauce with the spinach, previously washed and chopped. Also add the sautéed onion to finish your filling of salty baskets. Arrange the empanada tops inside the muffin tins, turning the edges a little to give the basket effect. If you do not have these molds, at the end of the recipe we will give you other options so you can make them. Precook them in the preheated oven at maximum temperature for 3 minutes.

Remove them and fill them with your spinach preparation. If you wish, you can add a piece of fresh cheese to melt. Cook the spinach and cheese baskets for about 15-20 minutes, until the egg coagulates and the dough is browned.

How to make the baskets not fall apart

So that the vegetable baskets do not fall apart, you must know options to cook them without a muffin tin. These are the best options:

  • Make a repulgue by pinching a part of the dough and taking it to the side to make the shape of the basket. Next, fill them and cook them in the oven, all together, dough and filling.
  • Line the bottom of a can with aluminum foil, then support the empanada dough to shape it. Cook it alone in the oven, on the tin for about 5 minutes so that it browns and keeps its shape. Then, remove them from the can, add the filling and cook them for 5 more minutes. In this case, it would be advisable not to add eggs to the white sauce, as it may not coagulate.
