This recipe for vegan sweet potato croquettes is the easiest in the world. You only need 3 main ingredients to prepare them and as a result you will obtain delicious and healthy sweet potato and zucchini croquettes prepared in the oven. Due to the texture of these two ingredients, the preparation does not require the typical béchamel sauce to bind them, therefore, these easy appetizers are lighter and more digestible.
Ingredients to make vegan sweet potato croquettes:
- 2 units of sweet potato
- 2 units of zucchini or large corvette
- ½ teaspoon of salt
- 1 pinch of pepper
- ½ cup of breadcrumbs
How to make vegan sweet potato croquettes:
The first step is to cook the sweet potatoes or sweet potatoes. You can cook them in water, bake them on a baking sheet or wrapped in aluminum foil until soft. Let them cool, peel them and mash with a fork until they become a puree. Preheat the oven to 180ºC and prepare a tray covered with baking paper.
