Vegan Tofu Quiche Recipe

Quiche is a savory tart of French origin consisting of a crispy pastry with a creamy filling.  The recipe for this tofu and vegetable quiche that I have prepared is totally vegan and delicious. I have prepared a quick vegan quiche dough with crispy spelled flour and a creamy filling of tofu, watercress and other ingredients, such as celery and fennel, which give it a different flavor touch. This vegan tofu quiche can be served as a hot or cold starter.

Ingredients to make Vegan Tofu Quiche:

  • ½ cup spelled flour
  • ¼ cup of water (60 milliliters)
  • 1 tablespoon vegetable oil
  • ½ teaspoon of salt
  • 2 cups of watercress leaves
  • 1 onion
  • 2 cloves of garlic
  • 1 stick of celery
  • ½ fennel bulb
  • 3 tablespoons of brewer’s yeast
  • 250 grams of tofu
  • ½ teaspoon of salt
  • 2 tablespoons of chickpea flour
  • 1 tablespoon of hemp seeds

How to make Vegan Tofu Quiche:

In a bowl mix the flour with the salt and the water and prepare a dense vegan quiche dough. Knead it for a minute and let it rest in the fridge for 10-30 minutes. Meanwhile  prepare the filling. Place the chopped tofu, garlic, chopped onion, watercress, celery, fennel, brewer’s yeast and half a teaspoon of salt in the blender. Blend well all the ingredients of the tofu and vegetable quiche until a homogeneous mixture is formed. Heat a pan with a little oil and transfer the tofu mixture from the mixer to the pan. Sauté the filling for 5 minutes, stirring occasionally.

After the resting time of the vegan quiche dough, cover the table or countertop with a little flour and stretch the dough with a rolling pin, giving it the shape of a circle several centimeters larger than the mold in which we are going to cook the quiche. Quiche. Preheat the oven to 180 degrees. Grease the mold and place the dough inside, giving it the shape of a large tartlet and leaving the edges of about 2-3 centimeters. Bake the dough for 15 minutes. Take the dough out of the oven and put the filling inside. Bake the tofu and onion quiche again for another 15-20 minutes. Sprinkle the hemp seeds on top and allow the vegan tofu quiche to cool before serving.
