Ceviche is one of the favorite dishes to enjoy during the summer thanks to its freshness and delicious flavor. Generally, it is prepared with ingredients from the sea, such as: fish, octopus, shrimp, among others, but if you follow a vegetarian diet, you can also enjoy a rich preparation. For this reason, we offer you a delicious ceviche recipe, an elaboration inspired by the most traditional vegetarian ceviche’s made with vegetables and lentils. It is also very popular to make a delicious and refreshing mushroom and cucumber ceviche!

Ingredients to make Vegetarian Ceviche:

  • 1 cup of lentils
  • 3 jars of water
  • 1 pinch of salt
  • ½ medium onion
  • ½ piece of jicama
  • 1 handful of coriander
  • 2 pieces of carrot
  • 1 large tomato
  • 2 lemons only the juice
  • 2 tablespoons ketchup or seasoned tomato puree
  • Salt to taste

How to make Vegetarian Ceviche:

To make the vegetarian ceviche recipe, first cook the lentils in a pot with 3 cups of water and a pinch of salt, let it boil for 10 minutes.

Tip: do not exceed the cooking time, the lentils only need to soften slightly, if you exceed the time they can fall apart and will not work for the recipe.

While the lentils are cooking, prepare the vegetables. To do this, chop the carrot, the jicama, the onion, the tomato into small cubes, remove the seeds from it, and also finely chop the cilantro. You can also grate the carrot and jicama and you can choose to julienne the onion and tomato. When the 10 minutes of the lentils have passed, drain the remaining water and reserve. When you have all the ingredients ready, transfer to a container or bowl, the lentils, the onion, the carrot, the jicama, the tomato and the cilantro, mix so that the vegetables are integrated and combined with the lentils. Add the juice of two lemons and two tablespoons of ketchup or seasoned tomato puree. Also add a pinch of salt and mix very well so that all the vegetables and lentils are bathed in the ketchup sauce. Before serving, let rest for 15 minutes in the refrigerator. You can also accompany with corn toast or crackers and add hot sauce to taste

Other ingredients to add in vegetarian ceviche

Just as we present the vegetarian ceviche recipe, the result and flavor is very rich, but if you want to provide an extra or different flavor, you can substitute the white onion for purple onion. You can also add a few pieces of mango and blueberries to give that sweet and sour flavor. On the other hand, if you are one of those who likes spicy, add a finely chopped Serrano chili to the preparation or, if you are very daring, try red habanero chili.

Do not forget to accompany this vegetarian ceviche with crispy toast, toasted corn, Mexican corn tortillas or with some crackers or whole grains.
