Veracruz Molotes Recipe

Learn how to prepare one of the richest appetizers of Mexican gastronomy, a very popular dish in different regions of Mexico. This time we are going to teach you how to prepare some delicious molotes from Veracruz. In this recipe you can try the molotes with a corn and potato dough, a beef filling, fried in abundant oil accompanied by cabbage and a tomato sauce with green chili.

Ingredients to make Molotes from Veracruz:

  • 1 kilogram of corn dough
  • 2 medium cooked mashed potatoes
  • Salt to taste
  • 1 liter of vegetable oil
  • 400 grams of ground beef
  • ½ onion finely chopped
  • 1 dozen finely chopped garlic
  • 80 grains of tomato puree
  • Pepper to taste

To accompany

  • White cabbage (cabbage)
  • White cheese
  • Hot sauce to taste

How to make Veracruz Molotes:

Begin the recipe for molotes from Veracruz by preparing the dough. In a container place the dough and the mashed cooked potato, add salt to taste and mix to integrate the ingredients. Then, cover with clear plastic or a damp cloth and let it rest.

Tip: you can use the dough for tortillas already made or prepare it at home with nixtamalized corn flour according to the instructions on the package.

For the filling of the molotes, in a pot with a splash of oil, sauté the onion and the finely chopped clove of garlic, when they begin to brown add the ground meat and a pinch of salt. Mix and cook approximately 5 minutes. Add the tomato puree and pepper to taste, mix and cook approximately 10 minutes over medium-low heat. When the meat is ready, remove the pot from the heat and reserve. Now it is time to assemble the molotes, first take a portion of dough with the help of a tortilla press or manually press as if you were making a tortilla, more or less it should be about 10 cm in diameter. Place the stewed meat filling in the center of the tortilla. Now you must close by wrapping the stew on each side, roll up the edges and press, roll to form a kind of elongated cylinder.

Fry in abundant hot oil until they are fried , it will take about 3-5 minutes, it is important that the pan has enough oil for the molotes to swim, in this way they will cook evenly.  When they are ready, let them rest on absorbent paper to remove excess oil. Place the molotes and add a little grated cabbage on top, followed by a spicy sauce to taste and a little grated cheese. Let’s eat!

What characterizes this dish is that you can choose the filling you prefer, such as stewed ground beef or you can also choose a filling of chicken, potato, bean paste, among others.  In addition, as you have seen, the recipe includes a type of cooked potato corn in the dough, this provides a crunchier texture when frying. We point out that you can also substitute the potato for plantain or for wheat or rice flour.
