Ingredients to make Chocolate and almond cake:
- 200 grams of semisweet chocolate
- 100 grams of butter
- 4 units of Eggs
- 200 grams of Sugar (1 cup)
- 75 grams of pastry flour
- 100 grams of ground almond
- 18 grams of baking powder
- 1 pinch of vanilla essence
- 1 handful of Raspberries
How to make Chocolate and Almond Cake:
- The first step to be able to make this chocolate cake recipe is to prepare all the ingredients.
- Now that we have everything ready, we take a bowl, add the chopped chocolate and the butter and melt it all together in the microwave. We can also do it in a water bath. Preheat the oven to 160ºC.
- When ready, add the sugar and a tablespoon of vanilla essence and mix. We reserve to cool. When the mixture is cold, separate the yolks from the egg whites and add only the yolks.
- Once the yolks are incorporated, add the ground almonds and continue beating. We can use manual or electric rods.
- Then, we gradually add the flour, the baking powder and a little more vanilla essence to taste. To make the dough thinner, we can sift the flour.
- For the chocolate and almond cake to have a spongier texture, we beat the whites until stiff peaks form. We add them to the mixture in two times and incorporate them with the help of a spatula, making soft enveloping movements from the bottom up.
- Pour the mixture into a previously greased and floured mold and bake the chocolate cakefor approximately 1 hour, until ready.
- When it is ready, we will let it cool on a rack, if we have one, and, once cold, we will reserve it in the refrigerator covered with plastic wrap. We’ll leave it overnight. If the center of the almond cake sinks, don’t worry.
- The next day, we fill the hole in the center of the chocolate and almond cake with raspberries or any other type of red fruit. We can also make whipped cream or Chantilly cream and decorate it with this.
