Ingredients to make Eggless Pastry Cream:

  1. ½ liter of liquid milk
  2. 4 tablespoons of Cornstarch
  3. 4 dessert spoons of sugar
  4. 1 tablespoon of vanilla essence

How to make Eggless Pastry Cream:

  • To make this rich pastry cream without eggs, we are going to start by pouring the milk and cornstarch into a jug or medium saucepan. Mix with a wooden spoon (if you don’t have one, a regular one will be fine too), until the cornstarch dissolves in the milk and you get a homogeneous mixture without lumps.

Tip: If you have any lumps left in the mixture, crush them on the sides of the jar with the spoon and they will dissolve instantly.

  • Bring the jug to low heat for a few minutes and add the sugar. Stir from time to time to prevent the cornstarch from sticking to the bottom and burning our pastry cream without eggs.
  • Add the essence of vanilla to the mixture and stir for a few seconds to flavor and perfume the preparation of the easy pastry cream.

Tip: If you want to make it with another flavor, in this step you can add the flavoring that you like the most (chocolate, strawberry, lemon juice or zest, etc.).

  • Once the pastry cream boils, it will mean that our easy pastry cream is ready, we will leave it on the heat for a few more seconds and then remove it. Let cool for 25-30 minutes in a cold place.
