Ingredients to make Carrot and Oat Muffins:
- 1 medium carrot
- 2 eggs
- 1 cup oat flour
- 1 tablespoon coconut oil
- 3 tablespoons xylitol or birch sugar (or other sweetener)
- 1 dessert spoon of chemical yeast or baking powder
- 1 handful of dark chocolate chips or chips (min. 85% cocoa)
How to make Carrot and Oatmeal Muffins:
- Beat the peeled and chopped carrot, the eggs and the coconut oil in a blender or mixer until we obtain a smooth cream.
- Mix the flour and xylitol in a bowl. Add this mixture to the mixer along with the yeast and mix everything.
- Tip: Xylitol is a natural sweetener with no calories but you can use another natural sweetener like agave or maple syrup or coconut sugar to make these fitness carrot muffins.
- Scoop the oatmeal carrot muffin batter into silicone or paper muffin cups, sprinkle a few chocolate chips or chips on top, and microwave the healthy carrot muffins for about 4 minutes on high to save time.
- Tip: You can also make the fit carrot muffins in the oven at 180ºC for about 15-20 minutes if you prefer.
- Wait for the carrot and oatmeal muffins to cool down a bit, and you’re done!
