Ingredients to make Carrot and Chocolate Cupcakes:
- 2 eggs
- ½ cup coconut oil (measured when solid)
- 2 cups of chopped carrot
- 1 tablespoon grated ginger
- 2 tablespoons of honey
- 2 tablespoons of chia seeds
- 1 cup whole wheat flour
- 1 cup brown (or coconut) sugar
- 2 dessert spoons of chemical baking powder or baking powder
- ½ cup 85% chocolate chips or chips
How to make Chocolate Carrot Cupcakes:
- In a bowl we mix the dry ingredients: flour, brown sugar, chia and baking powder. Book.
- In the blender, we beat the carrots with the eggs, coconut oil, grated ginger and honey.
- Mix the dry ingredients with the liquid ones until obtaining a homogeneous and smooth mass to make the carrot and chocolate muffins.
- Add the slightly floured chocolate pieces to the dough. The flour will prevent these from sinking and staying at the bottom of the carrot and chocolate muffins.
- We distribute the dough in the appropriate molds and bake the chocolate and carrot cupcakes in a preheated oven at 180 ºC for about 15/20 minutes, or until poking them in the center with a toothpick it comes out clean.
- Remove the carrot and chocolate cupcakes from the oven and let them cool before serving
