Ingredients to make Broken Calzones with yeast:

  • 3 cups of flour
  • 1/2 cup powdered sugar
  • 1 pinch of salt
  • lemon zest to taste
  • 1 tablespoon of rum or pisco (optional)
  • 60 grams of softened butter
  • 3 teaspoons of baking powder
  • 1 glass of water
  • 1/2 liter of oil to fry
  • 1 egg
  • 2 yolks

How to make Broken Calzones with yeast:

  • In a bowl, sift the flour, powdered sugar and baking powder and stir.
  • If you prefer, you can make the icing sugar recipe yourself at home.
  • Add the rest of the ingredients at once except the water that is added little by little until it forms firm dough.
  • Stretch the dough of the broken underpants with a rolling pin until it is thin (between 5 and 6 mm).
  • Once stretched, cut into rhombuses or rectangles and make a cut in the middle of each one and then pass one side of the dough through it and make the particular shape of the Chilean broken calzones.
  • Heat the oil and fry until golden. Turn them from time to time (2 to 4 min.) and when taking out sprinkle powdered sugar.
  • Serve the calzones roots with yeast freshly made and well drained. You will see how crunchy they are!
