Ingredients to make Bean Cookies:
- 210 grams of wheat flour (1½ cups)
- 90 grams of panela (or sugar)
- 125 grams of cooked white beans
- 80 grams of crushed walnuts
- 1 handful of oat muesli
- 1 handful of raisins
- 1 handful of dried cranberries
- 1 handful of walnuts
- 1 splash of agave syrup
How to make Bean Cookies:
- In a blender or electric grinder, grind the cooked white beans until they are a homogeneous puree
- Clean the same appliance well and grind the nuts until you get a kind of flour.
- Mix the flour, beans, sugar, nut flour in a bowl. Knead with your hands until all the ingredients are well incorporated.
- When you get dense, elastic dough, roll out the dough with a rolling pin on a piece of parchment paper or a floured surface to a quarter-inch thickness. With a cookie cutter, cut circles out ofthe bean cookie dough.
- On top of each bean cookie place some raisins, cranberries, chopped walnuts and a sprinkle of oat muesli. Paint the nuts with the agave syrup with the help of a brush.
- With the oven preheated to 180 degrees and bake the cookies for 10-15 minutes
- Let the white bean cookies cool and serve them.
