Ingredients to make Baked Gluten Free Donuts:
- ½ cup almond flour
- 8 dessert spoons of tapioca flour
- 1 dessert spoon of gluten-free baking powder or chemical yeast
- 1 pinch of salt
- 1 small egg
- 8 tablespoons maple syrup (or honey)
- ¼ cup coconut milk
- 1 tablespoon coconut oil
How to make Baked Gluten Free Donuts:
- In a bowl we mix the dry ingredients: almond flour, tapioca flour, salt and baking powder. This is the base of our gluten-free baked donuts.
- In a bowl we mix the other ingredients: the egg with the maple syrup, the milk and the melted coconut oil.
- Trick: Coconut oil solidifies at temperatures above 23ºC so you have to melt it before hand on the stove or in the microwave.
- Mix the dry ingredients with the wet ones and stir well until you get uniform dough. You will see that this gluten-free donut dough is similar to a cake or sponge cake dough, which is why it is not compact or moldable as it is with the traditional one.
- With the help of a pastry bag we fill the molds for homemade donuts (greased with coconut oil) with the dough. We put them in the oven previously preheated to 190 ° C for 12 minutes.
- Trick: Fill the holes in the molds up to 2/3 parts of their capacity with the dough so that they do not come out in the oven
- We take out the tray with the molds and wait 5 minutes before unmolding the freshly made gluten-free baked donuts to cool on a wire rack.
