There are many types of cupcakes that we can make. We can prepare them in various flavors, add fruits and vegetables, or make them more or less healthy. On this occasion, we propose a recipe for apple and cinnamon muffins, although you can omit the latter if you don’t like it.
Following our step by step, you will have some very tender and juicy muffins that can be used for a good breakfast or for a snack. Discover how to make easy and very soft apple muffins. You can take the opportunity to prepare them with the children at home because they will not have to wait so long for them to be ready.
Ingredients to make Apple Muffins:
- 2 apples
- 1 tablespoon butter
- 3 eggs
- 175 grams of sugar
- 75 milliliters of sunflower oil
- 200 milliliters of plain yogurt
- 225 grams of flour
- 1 tablespoon chemical yeast
- 1 dessert spoon of ground cinnamon
How to make Apple Muffins:
- Remove the core of the apples, peel them and cut them into small cubes.
- Put the tablespoon of butter in a pan on the fire. Sauté the apple cubes for about 4 minutes. Booking.
- Preheat the oven to 180ºC. Put the eggs in a bowl with the sugar and beat well until they are pale.
- Add the sunflower oil and mix well.
- Now, add the yogurt and integrate well.
- Mix the flour together with the chemical yeast and the cinnamon powder. Sieve the dry mixture on top of the egg, sugar, and yogurt mixture.
- Add the poached apple pieces. Reserve some pieces to decorate. Mix gently with a spatula.
- Put the paper capsules in some muffin cups. If you do not have a mold, put the double capsules so that the muffins do not deform. Fill the capsules with the apple muffin batter.
- Decorate with some bits of apple that we had reserved. Bake with heat up and down at 180 ºC for about 20 minutes or until golden.
- Let cool on a rack and serve once they are cold.
- When carrying fruit, it is advisable to consume these apple muffins for the first three days. If you have leftovers, don’t forget to store them in the fridge.
