Ingredients to make Apple and Cinnamon Cake:
- for the cake
- 3 units of medium Apples (450 gr approx.)
- 1 tablespoon of Sugar
- 60 milliliters of Water (¼ cup)
- 185 grams of Butter
- 165 grams of Sugar
- 2 units of Eggs
- 335 grams of Flour for biscuits
- 180 milliliters of Milk (¾ cup)
- For the cinnamon crunch
- 110 grams of flour
- 3 teaspoons of Cinnamon powder
- 60 grams of Butter
- 75 grams of brown sugar
- 2 teaspoons of Water
How to make Apple and Cinnamon Cake:
- We will start our apple pie with the cinnamon crunch. To do this, we mix the flour with the cinnamon powder and the butter in a bowl. To make it easier to carry out this task, we cut the butter at room temperature, as shown in the image, and mix with the tips of our fingers.
- Once the previous ingredients are mixed, add the brown sugar and continue mixing with your hands.
- To continue with the preparation of the crunchy, we put one or two tablespoons of water and form a ball with the dough obtained. We completely cover it with plastic wrap and reserve it in the freezer. It is necessary for the ball to freeze.
- Now we go for the apple cake. Peel the apples and remove the cores. Then, we cut them into not very thick wedges.
- Once cut, we take a pot, introduce the water with the sugar and leave it on the fire until it boils. When it reaches a boiling point, add the apples, lower the heat, cover the pot and let them cook for approximately 10 minutes, until the apples are soft. Drain and reserve for later.
- We take a large bowl and beat the butter with the sugar with the electric rods until obtaining a smooth mixture about to ointment. Then, we incorporate the eggs one by one and without stopping beating. It is important not to add the second egg until the first is fully integrated.
- Add half of the milk and continue beating. We can continue with the electric rods or the manual ones. Then we add half of the flour. For this ingredient it is more advisable to use manual rods. The ideal is to use cake flour because it already comes with the baking powder incorporated
- Once the flour is integrated, we pour the remaining milk and continue mixing. Then the rest of the flour. Preheat the oven to 180-190ºC.
- We check the cinnamon crisp to make sure it’s frozen. We take an elongated mold, I used one of 30×11 cm. and we grease it and flour it. Add two thirds of the dough spreading it well. Then, we incorporate a layer of applesand cover with the rest of the dough
- Separately, grate the cinnamon ball with a grater to obtain rather thick shavings. Cover the top of the cake with the grated cinnamon topping and bake the apple piefor approximately 50 minutes.
- When it is ready, let it rest for about 5 minutes and unmold the apple cake with cinnamon crunchon a wire rack. It is an incredible dessert that offers us a whole combination of flavors and textures.
