This recipe for vegetarian croquettes is a fresh and different dish to prepare for any dinner with friends. At this article we transport you to Greece with these Greek zucchini croquettes. We hope you like them!

Ingredients to make Greek Zucchini Croquettes:

  • 500 grams of Zucchini
  • ½ unit of Onion
  • 1 unit of Egg
  • 4 tablespoons of breadcrumbs
  • 2 tablespoons grated feta cheese
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 handful of fresh mint
  • For the batter
  • 1 unit of Egg
  • 150 grams of breadcrumbs
  • 150 grams of flour
  • 400 milliliters of olive oil

How to make Greek Zucchini Croquettes:

1.We gather all the ingredients to make the Greek zucchini croquettes.

2.Wash the corvettes and grate them without peeling them. We put them in a colander to release the water.

3.Finely chop the onion and place it in a bowl. Add the beaten egg, salt and pepper.

4.Next, add the breadcrumbs and minced mint.

5.Finally, we incorporate the grated feta cheese and the zucchini. Add a little salt and mix well. If the dough is very liquid, we can add more breadcrumbs or a little flour.

6.Form balls with the help of two spoons and pass the Greek zucchini croquettes in flour, beaten egg and breadcrumbs. We give it a croquette shape with our hands.

7.Fry the croquettes in plenty of olive oil at a high temperature. Take them out and drain them on absorbent paper.
