How to make Almond Torrejas:
- To make the almond Torrijas we begin by preparing all the necessary ingredients. The first step will be to grate or grind the stale bread.
- Separately, soak the almonds for 5 minutes in already boiling water
- After that time we drain, peel the almonds and blend with the teaspoon of vanilla and a little water, with a cup of water, approximately, will be enough.
- On the other hand, we separate the whites from the yolks in two different containers and beat the whites to the point of nougat, that is to say that when you lift the whisk they form firm peaks and do not fall.
- With the help of a spoon we add the yolks one by one, without stopping beating. It is important to incorporate at low speed to prevent the whites from collapsing.
- Once we finish beating, mix the egg in an enveloping way with the ground bread and the almonds.
- To form the almond Torrijas, pour spoonful’s of the mixture into a pan with enough hot oil. Fry on both sides until golden.
- To make the honey, boil the piloncillo in two cups of water together with the mint leaves. Bring to a boil over low heat, stirring constantly, until it thickens a bit.
- To finish, place the almond toast on a plate and bathe them with the piloncillo honey. Enjoy them with a warm coffee or a champurrado in the company of your family and friends.
