Ingredients to make Yucatan Lomitos:
- 5 tomatoes
- 2 garlic cloves
- 1 habanero chile
- 600 grams of pork (loin)
- 1 teaspoon condensed flavoring
- 1 pinch of salt
How to make Yucatan tenderloins:
- Cut the meat into small pieces (squares), put it in a saucepan and immediately put it on the fire, together with all the ingredients (the tomatoes are put whole).
- Cover the saucepan and leave on the heat for 20 minutes.
- The meat will release its juices and begin to become soft, move continuously with a large spoon so that it does not stick to the pan.
- If the meat is dry add a little water.
- When the tomatoes and chili are soft, take them out and blend only the tomatoes with a little water.
- Return back to the meat and add a teaspoon of the flavoring.
- Taste the stew to see if it is necessary to put a little more salt.
- Leave on the fire for about 10 more minutes, until the tomato boils and begins to be consumed.
- This stew is dry and can be accompanied with refried beans.
- It is eaten with corn tortillas, the chili is spread on the tortillas.
