Ingredients to make creamed beef:

- 11/4 beef
- 100g butter
- 1 egg
- 1 onion
- 1 shallot (scallions, shallots)
- 2 carrots
- 100 g cream (cream)
- 2 tablespoons of flour
- laurel
- thyme
- lemon
- Salt
- Pepper
How to make creamed beef:
- Put the meat in a pot and cover it with cold water.
- Bring to a boil, remove the fat with a skimmer and reduce the heat.
- Add whole and scraped carrots, onion, garlic, aromatic herbs, salt and pepper.
- Cover and let simmer for two hours.
- Two tablespoons of flour are mixed with hot butter and added to the pot.
- Let it boil for 5 min. The sauce should be smooth without being thick.
- When serving, beat the egg yolk in the cream and add a few drops of lemon to the pot away from the heat. It is served in a deep dish. 150g of mushrooms can be added during cooking.
