Ingredients to make Chocolate Pastry Cream:

  1. 2 eggs
  2. 30 grams of white sugar
  3. 1 tablespoon cornflour
  4. 50 grams of cocoa powder
  5. 250 grams of whole milk
  6. 1 Teaspoon vanilla extract

How to make Chocolate Pastry Cream:

  • To start making our pastry cream recipe you must prepare the ingredients. It is preferable that the sugar be pulverized, but if you do not have it, you can always do it at home.
  • In a deep pot add the milk and the vanilla essence, bring it to a medium heat until it boils. Allow the infused milk to cool slightly
  • Place the egg yolks in a deep bowl, add the cornstarch and cocoa powder.
  • Pour the infused milk into the deep bowl where we have the egg yolks and sugar. Mix until they are integrated with the help of a hand mixer. Bring the pastry cream back to a simmer and beat constantly to get a thicker consistency.
  • When you notice that the chocolate pastry cream has thickened sufficiently, remove it from the heat and let it cool. To prevent a layer of cream from forming on the surface, cover the cream with plastic wrap, allowing the paper to come into contact with it.
  • Once the chocolate pastry cream is cold, you can use it in your favorite preparations. I recommend filling choux pastry to make delicious profiteroles, or accompany some incredible Nutella brownies, as they are a truly exquisite combination.
