Ingredients to make COCKLES WITH RICE:
- 1 tablespoon sugar
- coarse salt
- 700 g cockles
- 300 g round grain rice
- 2 medium onions
- 1 clove garlic
- 1 green pepper
- 2 red tomatoes
- 100 g ham with bacon
- 2 bay leaves
- chopped parsley
- enough broth (500 ml)
- a splash of sherry
- saffron
How to make COCKLES WITH RICE:
- Clean the cockles well, washing them several times and leaving them in water with coarse salt for two hours so that they loosen all the earth.
- Peel and chop the onion and tomatoes, remove the seeds from the pepper and cut it.
- Cut the ham into cubes and put it in a casserole with the chopped onion and garlic clove; add the bay leaf and sauté gently for ten minutes.
- Step 2 Add the peppers and tomato and season with a pinch of salt and a pinch of sugar.
- Stir with a wooden spoon and leave for five minutes.
- Add the well-drained cockles and let them release the water over medium heat, stirring from time to time, water with a splash of sherry.
- Step 3 in a saucepan, heat half a liter of vegetable broth, adding chopped parsley.
- Wash the rice several times to remove the starch, and drain.
- Add to the casserole with the vegetables and stir with a spoon, fry for five minutes.
- Water with the hot broth.
- Add the saffron threads and cook uncovered over medium heat, until the rice is cooked (the broth will have been consumed but it will be juicy).
- Cover with a cloth and let rest for five minutes before serving.
