How to make Matambre stuffed with baked bacon:
- We prepare all the ingredients to cook the matambre stuffed with bacon in the oven more easily. So, we cook the eggs, put them under cold water and remove the shell.
- Once we have everything ready, we place the brisket on the work table and proceed to fill To do this, we put the bacon cut into thin slices distributed throughout the meat. On it, we arrange the cheese cut into squares, the pine nuts and the boiled eggs, joining them with a wooden toothpick to prevent them from moving.
- Tip: We recommend using a long toothpick to be able to remove it easily.
- We roll the meat very carefully and close the skirt well. Then, season to taste and tie the matambre with kitchen string or mesh to prevent it from opening during cooking.
- We put the matambre stuffed with bacon in the oven preheated to 180 ºC, and leave it until it is well done. Depending on the type of oven, the meat may take more or less time to cook.
- While the skirt is being made, prepare the sauce. To make it, we sauté the carrots, onions and leeks in a casserole with oil. When these ingredients are sautéed, add the wine and let the alcohol evaporate.
- When the alcohol has evaporated, add the thyme and thicken the sauce that will accompany the matambre stuffed with bacon with a little cornmeal and water.
- Once thick, we grind the sauce to get a fine texture.
- When the meat is ready, we remove the mesh or kitchen thread, and the toothpick from the eggs to prevent diners from harming themselves when eating it.
- Cut the stuffed matambre into thick slices and proceed to assemble the plate.
- Fry some very thinly sliced potatoes and place them on the base of the plate. Next, we place the slices of matambre stuffed with baked bacon and the sauce. If you prefer, you can cook the potatoes in the oven instead of fried and even prepare a mashed potato. Bon Appetite!
