Ingredients to make Marinated Pork:
- 1 kilogram of pork
- 4 pieces of cloves
- 2 garlic cloves
- 1 piece of onion
- 100 grams of Chile pulla
- 100 grams of Chile guajillo (not spicy)
- 100 grams of wide Chile
- 100 grams of Chile pasilla
- 1 handful of herbs (thyme and bay leaf)
- 5 tablespoons of Oil or Butter
How to make Marinated Pork:
- Boil the meat with a few cloves of garlic and a little onion, add salt as soon as it starts to boil.
- Meanwhile, we deveined the chiles and passed them through a griddle without burning them. Then, they are left to soak for about 10 minutes to soften. Then, they are blended with the roasted onion, the garlic cloves, the cloves and a little of the meat cooking broth, we reserve the sauce.
- Once the meat is cooked and tender, it is fried with a little oil. When it starts to turn golden, add the sauce to the pan and let it season with the herbs and a little more broth.
- The consistency of the pork in adobo should be similar to that of the mole, neither too thick nor too watery. You can accompany this dish with rice a la jardinera or some corn tortillas.
