Potatoes with broth recipe
Ingredients to make Potatoes with broth:
- 400 grams of potatoes
- 4 pieces of cod of 100gr each approx.
- 4 eggs
- 2 norms (chorizo peppers)
- 1/2 Kg of crushed tomato
- 4 bay leaves.
- 2 dl of olive oil
- 3 liters of hot water (approx.)
- 1 spoon of sugar
- Salt to taste
How to make Potatoes with broth:

Sauté the tomato with the oil, the norms, the laurel and the teaspoon of sugar, in a clay pot, (another type of container also works), over medium heat. At the same time, the water is heated.

When the tomato is cooked, pour the water into the pan.

The potatoes are peeled and cut into slices one finger thick and poorly cut, to make the thick broth.

When they have been cooking for 5 minutes, add the cod, properly desalted, (I put it with the skin facing up).

After three minutes, more or less, I rectify the salt and add water if the evaporation has exposed the cod.

When the potato is practically cooked, I add one egg per person to the guise.

In a couple of minutes it is ready.

It is served hot and with abundant broth in each dish.
