Ingredients to make Venetian Rice:
- 1 kilo of peas (they can be frozen)
- 350 grams of rice
- 30 grams of olive oil
- 50 grams of butter
- 50 grams of cured ham
- 1 large onion
- 2 sprigs of parsley
- 1 liter of meat broth
- 50 grams of grated Parmesan cheese
- 1 pinch of pepper
- 1 pinch of salt
How to make Venetian Rice:
- Put the oil, half the butter and the ham or bacon cut into small pieces in a casserole.
- Add the onion and parsley very well chopped.
- Lightly fry all this and add the peas, stirring well so that they soak up the seasoning.
- Add a little broth and cook for about 10 minutes.
- Then add the rice and cover it with the necessary broth.
- Before serving, sprinkle the rice with grated cheese and a little pepper and spread a few pieces of butter on the surface.
