Vegetarian Risotto Recipe

Ingredients to make Vegetarian Risotto:

  • 300 gr. of rice
  • 1 onion
  • 1/2 red bell pepper
  • 1/2 eggplant
  • 1/2 zucchini
  • 1 carrot
  • 1 leek
  • 100 gr. of green beans
  • 2 tablespoons of olive oil
  • Salt
  • Pepper
  • Broth
  • Grated Parmesan cheese

How to make Vegetarian Risotto:

  1. Prepare the ingredients.
  2. Cut the vegetables.
  3. Sauté the onion and the bell pepper with the olive oil.
  4. Add the other vegetables. Season.
  5. Cook all the vegetables at medium point. Withdraw.
  6. Add the rice in the same pan. Stir until they take on a light toasted color. Spice with salt and pepper.
  7. Add the broth little by little. Stir occasionally.
  8. When the rice is almost ready, add the vegetables.
  9. Mix all ingredients. Cook until complete cooking.
  10. Sprinkle with grated parmesan cheese. Serve very hot and enjoy…
