Ingredients to make Choco Meatballs:
- 500 grams of choco or cuttlefish
- 1 unit of egg
- 1 garlic clove
- 1 handful of parsley
- 2 tablespoons breadcrumbs
- 100 grams of flour
- for the sauce
- 1 unit of onion
- 1 deciliter of garlic
- 1 liter of fish broth
- 125 milliliters of white wine
- 1 splash of olive oil
- 1 pinch of salt
- 1 pinch of saffron
How to make Choco Meatballs:
- Clean the chocoand cut it into pieces.
- Put the cuttlefish, the egg, the garlic, the parsley and the breadcrumbsin the food processor and grind everything.
- You can leave it very chopped if you do not like to notice pieces or leave it semi crushed.
- Transfer the crushed mixture to a plate and pour a little flour into a bowl.
- Make the balls of the choco meatballsand go passing them through the flour.
- Put a pan with plenty of oil over medium high heat. Go frying the meatballs and browning them on the outside.
- Leave them on a plate with kitchen paperto absorb the oil.
- Now prepare the sauce. Chop the onion and put it to sauté in a casserole, halfway through cooking add some chopped garlic
- Add the wine, let it reduce for a few minutes. Add the fish broth and meatballs.
- Let everything cook for about 30 minutes.
- Taste for salt and add a little saffron if you like them with more color.
- Turn off and let the sauce rest for a few hours before serving your choco balls in sauce.
- Tip: You can also make the sauce the day before to save time.
