Ingredients to make Caldeirada de raya:

How to make Caldeirada de raya:
- Cook the sliced potatoes and the onion cut in 4 in salted water.
- Meanwhile, in a frying pan, prepare the garlic sauce.
- When the potatoes are almost ready, add the previously cleaned and salted stripe pieces, and cook for just a few moments until they are done.
- Remove from the heat, discard almost all the cooking water, leaving only a little at the bottom and add the garlic sauce… stirring the saucepan so that it binds the sauce and letting it cook for a couple more minutes so that it takes on flavor.
- Tips and tricks: This is one of the most typical Galician recipes, a simple recipe and can be made with any type of fish that can be cooked, whether white or blue.
- In Galicia the sailors, when they are fishing on the high seas, usually prepare it in the same way but cooking everything with sea water.
- Garlic sauce: in a frying pan with a good jet of oil, brown 5-6 medium-crushed garlic cloves without the skin and a bay leaf.
- When the garlic begins to brown, remove the pan from the heat and, while warm, add a splash of vinegar, a pinch of ground white pepper and a little ground sweet paprika… stirring to bind the sauce.
- This sauce is poured into the fish pot once it is ready.
