Ingredients to make Tropical Rice:
- 4 cups of Basmati rice
- 3 slices of natural canned pineapple
- 60 grams of laminated almonds
- 200 grams of York ham in a single slice
- 1 roasted red pepper
- 1 pinch of curry
- 1 pinch of chili
- 1 tbsp. vinegar
- 6 tablespoons of virgin olive oil
- Salt to taste
How to make Tropical Rice:
- Rinse the rice and cook it in a liter of boiling water for 20 min.
- When it is ready, drain it, refresh it under running cold water and leave it in the strainer to drain well.
- After a while place it in a salad bowl and water it with half the olive oil.
- Then drain the pineapple and cut it into small pieces, cut the peppers into strips and cube ham. Add everything together with the rice, as well as the almonds.
- Separately, mix the curry with the chili, vinegar and a pinch of salt, emulsify a little together with the remaining oil, beating the mixture well with the help of some metal rod, then pour the vinaigrette into the salad bowl and mix everything well and serve. Cold.
