How to make Thai rice with vegetables and chicken:
- Prepare all the ingredients to prepare our Thai style stir-fried rice. Keep in mind that the classic recipe is made with chicken, but you can also use rabbit, as we have done in this case.
- We cook the rabbit in salted water. If you were making the recipe with chicken, the procedure would be the same, what we want is to make the meat and then shred or shred it.
- Meanwhile, we make a garlic paste. To do this, in a mortar we put the garlic and ginger with a teaspoon of salt and crush it to get a smooth texture.
- We also take advantage of and finely chop the vegetables. Cut the zucchini, carrot and pepper into julienne strips, while we cut the leek onion into rings.
- At this point the meat should be ready, so remove it from the water and wait a few minutes for it to cool so you can handle it and shred it. If you want to get a chicken broth for another recipe, you can add whole vegetables to the slow cooker
- To cook this Thai type rice, it is best to use a wok, if you do not have it, use a high pot. So, heat sesame oil and sauté the vegetables along with the meat.
- When you see that everything starts to brown, add the vinegar and stir everything.
- Finally we added the rice and seasoned with soy sauce. Continue cooking over high heat and stir everything in the wok.
- To give an extra touch of flavor to this Thai-style dish, you can make a soy sauce prepared following the recipe for soy sauce for meats.
- When serving, check the seasoning and correct if necessary. This dish of Thai rice with vegetables and chicken does not need any more garnish, but you can present some original Thai-style spring rolls as a starter to continue in the same vein, bon appetite!
